These chicken burgers were excellent -- full of flavor and moist as could be. I did throw in a small handful of breadcrumbs, but I'm not sure they were needed. The aioli had lots of bright flavors from the lemon, vinegar, and mustard. Bravo to DailyMeals for a burger done well. —annalea

What You'll Need

Ingredients
  • Chicken Burger
  • 500 grams ground organic chicken
  • 1 clove garlic, finely diced
  • 1 teaspoonworcestershire sauce
  • 2 tablespoonsflat-leaf parsley, chopped
  • 5 basil leaves, chopped
  • 1 egg
  • 1 teaspoonsea salt
  • 1 teaspoonpepper
  • Butter lettuce
  • Brioche buns, toasted
  • 5 slices Gruyère cheese
  • Spiced Aioli
  • 2 Egg yolks
  • 2 teaspoonsLemon juice
  • 1 teaspoonapple cider vinegar
  • 1 tablespoongrainy mustard
  • 3/4 cupolive oil
  • 1 teaspoonsalt
  • 1 1/2 teaspoonscayenne pepper
  • 1 garlic clove, chopped
Directions
  1. Mix the first 8 ingredients together and form them into burgers (they will be pretty moist, but there is nothing worse than dry chicken). If the mix is too wet, add some breadcrumbs. Gently cook in a skillet for about 5 minutes on each side.
  2. While the burgers cook, make your aioli. Add the egg yolks and half the lemon juice and cider vinegar into a blender or bowl. Add a few drops of oil and blend or whisk until you create an emulsion. Add the garlic, remaining lemon, and vinegar and start to drizzle in the oil very slowly.
  3. Once you have a nice mayo like consistency, add the mustard, cayenne, and salt.
  4. Add cheese to your burgers and cover for a couple of minutes to melt the cheese. At the same time, toast the buns in the oven.
  5. Slather your aioli onto the buns, add lettuce, and then add your burger. Enjoy!

These are one of my go-to-recipes. I have 4 kids who all have their picky-eater issues (why can't they all dislike the same thing!) They all LOVE these! The chicken mixture is very soupy, you just have to use a measuring cup to scoop it out and spread it to the desired shape. Then they cook up beautifullY! . I do them on my griddle or in the cast iron skillet. I've varied the herbs for what I had on hand and don't do the cheese.

I made this recipe tonight and my partner looooooooooved it! Really simple but delicious. The ground chicken was perfectly moist. Did not have parsley, but I'm sure it would only make it better. Will definitely make this again and again.

I haven't made these yet but they seem similar to my own turkey burger recipe except for a few ingredients I use that shpd translate well to these chicken burgers. I also use approx. a tablespoon or so of prepared horseradish; a generous dash of spicy mustard; fresh or dried rosemary, 1egg, diced onions, and enough bread crumbs to bind. They are absolutely delicious! But I have a concern about the aioli in this recipe; using raw egg yolks is definitely a salmonella health concern and can be potentially dangerous.

I don't think that any of the reviewers actually made these burgers. I told my wife that I should have questioned the recipe after reading the cook's intro about the failed dinner party of firsts.

This is a poorly written recipe (500 grams of chicken, but then everything else in customary units?) You cannot make these into patties without using bread crumbs, and a lot of them! The vinegar quantity, the option of using a whisk to make the aioli...tried to get to a mayonnaise consistency, quit after 5 minutes and got out the hand mixer. Someone needs to check these recipes before putting them on this very cool, slick, seemingly knowledgeable website.
