And since I love spices (who doesn't?!), and adding spices to my daily Dominican coffee is a custom I keep, it was a natural progression to add more to a drink that revitalizes and comforts us.

Ingredients

Step 1: Steep spices

In a large saucepan, combine cinnamon sticks, cardamom seeds, star anise and 1quartwater [2 liter]. Simmer over very low heat until the liquid has reduced to half.

Strain and discard all the solids, careful not to scald yourself.

Step 2: Whip cream

In the meantime, whip the heavy cream with the mixer wire attachment at medium-high speed until it forms soft peaks (1 ½ minutes).

Add powdered sugar and whisk until it forms firm peaks (2-3 mins).

Step 3: Make coffee

Add the ground coffee to the bottom of the french press, and add the boiling liquid you just strained.

Let it rest for 30 seconds, then press.

Step 4: Serve

Pour the coffee into six tall glasses and add brown sugar to taste. Top with a swirl of cream, and sprinkle with cocoa.

Serve right away with a coffee stirrer or spoon.

Variations

You can make this without sugar, if you prefer your coffee strong and unsweetened, it's a a great winter coffee drink on its own: half tea, half coffee.

You can also sprinkle with some powdered cinnamon in addition to the cocoa, or you can drizzle it with dark chocolate syrup if you have any.

Top tips

French press yields a great, strong, foamy coffee, and it is the safest way to use this flavored water.

I do not recommend this recipe with an Italian espresso maker (moka) or an electric coffee maker, those require you to use clean water.

    Hi there! I tried your recipe like it was. I left it out. First off, I liked it and it was very different, but I did change numerous things this second time. The cardamom and anise was way too much for me. I also found my beans didn't give off enough coffee flavor. So, here are the things I changed. I cut it down to 1 cup instead of two as my hubby won't drink coffee. (Sad, I know!) I made a strong 1/4 cup of coffee (Papua New Guinea PB). I added a half a cup of milk, too. I put in 1 cardamom pod, crushed and a quarter piece of anise. I then used 1/4 cup water. I added the brown sugar (1 tsp.) to it also. Next time I will cut the brown sugar. Heat all of above until boiling slightly. I let it simmer for a good 5-10 minutes.In my cup I added 1 tsp of real vanilla (from Mexico). TTopped with a squirt of Redi-Whip and the cocoa and cinnamon. Oh my gosh! It was delicious! I might add one more cardamom in it, but the anise was enough for me.

Many contained sweetened condensed milk and I dislike that so I came up with different types of sweeteners or milk. Thanks so much for this one! I've never had cardamom or anise before and had to go find it!
